BEHIND THIS CHICKEN NOODLES SOUP

Ahhhh Yeah! Guess who’s participating in another noodle challenge?! Yup, your girl right here! Let me refresh your memory. Remember my Chicken Tocino Calamansi Stir Fry recipe? That was my first entry for their First Fortune Noodle Challenge. It was fun using their products to create wonderful recipes.
Now for this second round, I’m making a super easy recipe using your Microwave. Yes, you read me right! – MICROWAVE Tootz!
HATCH CHILE CHICKEN UDON SOUP OVERVIEW

I got this idea from my previous post because I had Hatch Chiles from a jar left over in my fridge. I figured I should create another Asian Fusion by implementing a spicy tingle within the udon soup during this freezing winter season. What better way to incorporate udon noodles with New Mexico’s Hatch Chiles in a soup, right?
As I have mentioned before on my Hatch Chile Chicken Street Tacos post, I bought the jarred Hatch Chiles from our local grocery store here in Albuquerque. We like the green chiles as oppose to the red chiles. This just saves a little time and mess from roasting and deseeding the chiles.
To make it easier for your lazy days when you don’t want to bust out your pans, woks, or skillets; the microwave will be your cooking gadget. It’s definitely convenient cause all you need are a couple of bowls to heat these udon noodles and the chicken with the sauce. That’s about 20 minutes of your time.
THE BREAKDOWN

- Shredded Rotisserie Chicken
- Fortune Udon Noodle in Chicken Flavor
- Hatch Chile or any Green Chile
- Canned Corn – No Salt
- Green Onions
FORTUNE UDON NOODLES

These Fortune Udon Noodles comes in 3 flavors: Mushroom Flavor (Vegan), Chicken Flavor, and Shoyu Flavor!
The udon noodles are pre-cooked and made from only 4 ingredients – water, wheat flour, flaxseed, and salt. The soup bases are different depending on what flavors you choose to use. There are 130mg of ALA Omega-3 per servings with 0g of corn sweetener. You know what’s even cooler? You can freeze these noodles of to 3 months. All you have to do when you are ready to cook them is to defrost in your fridge or warm in boiling water!

Hatch Chile Chicken Udon Soup
Ingredients
- ⅔ cups of Rotisserie Chicken
- 2 Tbsp Hatch Chile (jarred or canned)
- Fortune Udon in Chicken Flavor
- 2 cups of Water
- 2 Tbsp Canned Corn (No Salt)
- 1 stalk of Green Onions (for garnish)
- 1 Tbsp of #Fortune

Instructions
- In a microwave safe bowl, add 2 cups of water to the noodles. Empty half of the soup base from the packet (save the other half for later). Cover bowl and microwave for 3 minutes according to instructions. Set aside.
- In another bowl, mix the rotiserrie chicken, hatch chiles, corn, green onions, and the rest of the soup base packet. Mix thoroughly. Cover bowl and microwave for 1-2 minutes. Set aside.
- Grab 2 bowls (or reuse the same 2 bowls) and divide each of the contents evenly. Top off with a few of the green onions, corn, chicken mixture if there are any extra left over. Serve immediately.
