These tasty corn on the cobs are chopped into coins and spiced with mediterranean seasonings. Dip these corn coins with the mediterranean dip made with labne for the perfect pairing. It’s the best finger food for parties!
For this recipe, I decided to make some summer time finger foods that you can bring to your gatherings. I made the corn on the cob into rings or corn coins. It would be easier to eat and less of a mess on your face! The corn coins were seasoned with spices that you may have in your pantry.
I thought about turning the corn on the cobs into riblets and putting a Mediterranean twist of flavor to it. It has been a popular trend going on Tik Tok!
Hell No! There is no way that I’m commiting finger suicide cutting the corn with my blind right eye. (Yes if you didn’t know, I am visually impaired.) Safety was my main concern.
Cutting the corn into rings was easier for me. Cutting a long corn is difficult no matter what. I used a sharp chef knife and was becareful.
I’m using Karoun Dairies Labne to make a delicious mediterranean dip to pair with these corn coins. The dip has the same ingredients as the corn coins to keep the mediterranean theme going.
WHAT IS LABNE?
Labne or Labneh cheese, also sometimes called strained yogurt or yogurt cheese, is a type of soft cheese made by straining yogurt or kefir to create a thicker, more highly concentrated final product that can be seasoned for use as a dip or spread.
THE BREAKDOWN
- TWO WHITE CORNS – I used fresh white corn cause they are sweeter. You can use yellow corn. Make sure you remove and husk the corn. If using frozen corn, they must thawed in the refridegerator.
- MEDITERRANEAN SEASONINGS – Dried rosemary, garlic power, smoked paprika, cumin and oregano.
- BUTTER AND EXTRA VIRGIN OLIVE OIL – Both hold the seasonings of flavors
- KAROUN MEDITERRANEAN LABNE – To use for the Mediterranean Dip
- FRESH PARSLEY – For garnishing and brings out the flavor in the dip too.
HOW TO MAKE THE CORN ON THE COB COINS
Remove outer layer of the corn and shuck them.
With a sharp knife, trim off the tip and ends of each corn. Cut each corn into 8 coins or about an in wide. Place them in a large mixing bowl and set aside.
Preheat air fryer to 400F.
In a small bowl, melt butter in the microwave for 20-30 seconds. Add the extra virgin olive oil in the bowl.
In another medium sized bowl, mix together the melted butter with the seasonings. Make sure the corn coins are well coated.
Place about 8 corn coins (one corn) living space. Air fry the corn coins for 10-12 minutes flipping half way through.
The corn coins should be toasted and a little charred. Continue with the next batch of corns.
HOW TO MAKE THE MEDITERRANEAN DIP WITH LABNE
In a small bowl, mix together the labne, chopped parsley and the rest of the seasonings.
Taste the dip and make sure it is to your liking. I sprinkled smoked paprika, more extra virgin olive oil, and parsley for garnish.
STORING THE LEFTOVERS
Honestly, the fresher the better straight out of the air fryer along with the dip freshly made. But if you do end up with alot of the corn on the cob coins, put it in a sealed container. Place them in the fridge. They should last up to 3 days.
For the Mediterranean dip (hoping that no one double dipped – LOL), store in a sealed container. This should last up to 2-3 days.

Corn On The Cob Coins

- Grab a serving dish and stack the corn on the cob coins. Garnish with fresh parsley!
Mediterranean Dip
- In a small bowl, mix together the labne, chopped parsley and the rest of the seasonings.
- Taste the dip and make sure it is to your liking. Sprinkle smoked paprika, more extra virgin olive oil, and parsley for garnish.
- Dip a corn coin and devour!
