Pineapple Ginger Chicken
Ingredients
- 4 Skinless Chicken Breasts (1” Cubed)
- 1 20 oz can Pineapple Chunks (save ½ cup of the syrup)
- 2 tbsp All Purpose Flour
- ½ tsp Cracked Black Pepper
- 1 tsp Garlic Powder
- 2 tbsp Organic Extra Virgin Coconut Oil
- 2-3 Organic Garlic Cloves (minced)
- 1 med Organic Red Onions (chopped)
- 1 inch Organic Ginger (grated)
- 2 tbsp Orange Juice (Low Acid)
- 1 tbsp Organic Coconut Aminos or Low Sodium Soy Sauce
- ½ cup Organic Veggie Broth
- 1 tbsp Cornstarch

Instructions
- Mix the flour, garlic powder, and pepper and sprinkle over the chicken breasts. In a large pan or wok, heat the oil over medium heat and add the chicken. Cook for 5-7 minutes until almost cooked. Remove chicken and set aside in a plate.
- Add the chopped onions, garlic, and ginger and saute for about 5 minutes or until tender. Add the chicken back into the pan along with the orange juice, pineapples, and coconut aminos. Then mix in the veg broth and cornstarch.
- Simmer for 7-10 minutes until the chicken is cooked thoroughly. Serve over jasmine rice or cauliflower rice!
