INGREDIENTS BREAKDOWN
- Cauliflower Bun – I used Trader Joe’s cauliflower pizza crust as a low carb replacement for hamburger buns. You can use any frozen cauliflower pizzas or make your own cauliflower crust.
- Meatless Burger – I used Beyond Meat Burger patty. There are alot of meatless burger patties nowadays. Choose the one you like the best!
- Salsa – Any salsa will do. It doesn’t have to be red. I used Sam’s Fresh Foods in Cantina Style because I had leftovers from a previous food blogger challege.
- Jalapeno Coins – These are homemade using cornstarch and seasonings.
- Pepperjack Cheese
- Red Onions, Spinach, and Cilantros – The fresher, the better! Get your veggies in Tootz!
HOW TO MAKE THE CAULIFLOWER BUNS
Use the directions on your cauliflower pizza crusts of choice. Unfortunately, my cauliflower pizza crust broke into several pieces as I was trying to flip it over. You might’ve seen that on my Instagram Stories!.
So I added some shredded cheeses and pop them back into the oven to let the cheese melt. I did this so the cauliflower crust could bind together.
This is part is totally optional. I wanted to have grill marks on my cauliflower buns so I gently fried it over my grill pan.
THE BURGER PATTY WITH SALSA
Preheat your pan over medium heat. Pour in your oil. Place two of the thawed meatless burger patties and cook them to 4 or 5 minutes on each side.
When the patties are half way cooked through, place about 1 tablespoon of your desired salsa. Flip over and repeat the same process. Set aside until to create the burger.
THE JALAPENO COINS
You will want to cut and deseed your jalapenos. One or two jalapenos are good for the burgers depending on how many you want in each burger.
Mix your seasonings together and place the jalapenos rings in the bowl.
Gently coat each jalapeno rings and remove the excess.
In a pan, heat oil over medium high heat. Place your coated jalapeno rings once the oil is hot. Fry the jalapenos for 2-3 minutes on each side or when its golden and crispy. Drain over a paper towel and set aside when you’re ready to build the cheese burger.

- 1 10.6 oz Cauliflower Pizza Crust (I used Trader Joe's)
- 1 Meatless Patties
- 1 cup Mexican Blend Shredded Cheeses
- 4 tbsp Red Salsa
- 4 pieces Raw Red Onion rings, 2 rings per burger
- 2 slices Pepper Jack Cheese
- ½ cup Spinach
- Cilantro for garnish
- Oil for frying
Jalapeno Coins
- 1 whole Jalapeno, cut into rings
- 1 ½ tbsp Cornstarch or All Purpose Flour
- 1 tsp Black Pepper
- 1 tsp Onion Powder
- 1 tsp Garlic Powder

- Grab 2 cooked cauliflower buns. Add a handful of spinachs and place the salsa burger on top. Next add the jalapeno coins then one slice of pepper jack cheese, 2 red onion rings, cilantros, and more salsa. Repeat the same process for the other cheese burger. Garnish with fresh cilantro and you're ready to serve!
