    Spaghetti with Sauteed Veggies

    It may be the end of Summer but this Spaghetti with Sauteed Veggies is delicious for any season around dinner time.

    This Sauteed Veggies Spaghetti is a spin off of my Meatless Balls Spaghetti Seasoned in Olive Oil.  I twisted it up by adding veggies and cheese.  I know a lot of you don’t like veggies that’s why you may use your favorite ones.  The only time I use salt is when I salt any type of pasta.  It is up to you to omit or add any sodium to this recipe. I am here to provide a recipe on how I made my meals.

    Spaghetti with Sauteed Veggies

    Ingredients
      

    • ½ 12 oz Barilla Veggie Spaghetti
    • ⅓ cup Extra Virgin Olive Oil
    • 2 cup Veggies of your choice
    • 1 tsp Minced Garlic
    • ½ small diced Yellow Onion
    • 1 small Tomato (diced)
    • 1 tsp Cumin Powder
    • 1 tbsp Onion Powder
    • 1 tbsp Garlic Powder
    • 1 tsp Black Pepper
    • 1 cup Shredded Cheeses
    • 1 cup of #Laughter

    Instructions
     

    • Boil spaghetti according to the package instructions. Drain spaghetti saving 1 cup of the pasta water.
    • In a large frying pan add oil in medium heat. Add garlic and onions and saute til tender and fragrant. Add your favorite veggies, tomato, cumin, onion and garlic powder and black pepper. Saute for about 5 mins.
    • Toss in the spaghetti into the pan lowering the heat low to medium. If its dry, add pasta water 1Tbsp at a time. You may also want to add more seasonings to taste.
    • Transfer to a plate and sprinkle shredded cheese to garnish.

      oh my gosh this looks so good!! i usually have spaghetti plain but i think this is going to become my new favorite.. haha

      Oh how I love spaghetti! Will try this out for my kids. 🙂 …Will subscribe as well. I have always been a foodie. I like to try new food recipe once in a while!

      This actually looks pretty good! I am the type where, 75% of the time, veggies need to be snuck into the main course of my meal. I’ll have to try this recipe.
