    Sweet and Spicy Tofu Jungle Noodles

    Looking for a sweet and spicy yet savory flavor for your Tofu thats gluten free with vegetables?  You’ll drool over these Sweet and Spicy Tofu Jungles Noodles.

    I decided to step up my noodle game again Tootz!  This Sweet and Spicy Tofu Jungle Noodles is for my vegetarian, meatless, and plant based followers.  It’s a blend of Thai and Japanese flavors fused into one.

    WHY CALL IT JUNGLE NOODLES?

    Because the name “rainbow noodles” are too damn common!  You feel me though? Atleast, my jungle noodles are brownish in color with a hint of pretty rainbow colors from my veggies.

    THE SWEET AND SPICY TOFU JUNGLE NOODLES OVERVIEW

    🎶Welcome to the Naughty Jungle!🎶 If only I had a theme song but let’s just pretend you hear it, okay? As I mentioned before, I had a few of JSL Foods Gluten Free Noodles packages left over from the Fortune Blogger Recipe Challenge a few weeks ago. 

    Remember my Chicken Tocino Calamansi Stir Fry noodles that I submitted? Well, I used their Gluten Free Soba Buckwheat Noodles in Shoyu flavor for this recipe and stir fried them too.  There were  some veggies that I had leftover and I didn’t want to let them go to waste.  And yes, this will only take about 30 minutes of your time!

    Are you down to make this Sweet and Spicy Tofu Jungle Noodles?

    THE BREAKDOWN

    • Fortune Gluten Free Soba Buckwheat Noodles
    • Extra Firm Organic Tofu
    • Veggies of your choice – I used Organic Spinach,  Mushrooms, Sweet Mini Peppers, Red and Green Onions
    • Organic Coconut Sugar
    • Organic Coconut Aminos
    • Sriracha for that spicy kick!

    These Gluten Free Noodles have the same quality you would find at your favorite noodle restaurant! The Gluten Free Soba Buckwheat Noodles are precooked so it will take about 3 more minutes for us to cook in boiling water! 

    Soba is a Japanese name for buckwheat which is made from buckwheat flour.  It is totally not related to wheat at all!  Therefore, the noodles are gluten free! Honestly, you only need a handful of your favorite veggies.  Feel free to add more veggies!

    They’re good for you and packed with lots of vitamins. Or maybe not, since some of you are picky.  Eat it plain! BOOOOORING

    SWEET AND SPICY TOFU

    Make sure to squeeze and drain the liquid out of your tofu!  Use a good amount of paper towels, wrap the tofu around, and add something heavy over it. If you have a tofu press it works way better than spending  so much on paper towels! 

    I decided to cut the tofu into triangles or as I call them, “triads” or do the usual squares.  It’s all about to you Tootz.  Then, I let the tofu triads marinate for about 20 minutes in the slurry while I gathered and chopped the veggies.

    When the tofu is done marinating, I baked them at 400F for about 10 minutes.  Flip them half way through after 5 minutes. The baking process didn’t take long because there were only 6 small pieces.

    SWEET AND SPICY STIR FRY SLURRY (AND MARINADE)

    I love using organic coconut sugar for the fact that it gives off a caramel flavor. If you don’t have organic coconut sugar, go ahead and substitute brown sugar, maple syrup, honey or regular white sugar.  The point is to make this dish a little sweeter. Same goes with the coconut aminos. If you don’t have any, just use tamari, low sodium soy sauce, or regular soy sauce.

    Remember to always adjust to your liking! Since the package included the shoyu flavor, I used less than half of the packet for the slurry.  Shoyu is already salty enough but use more than what you need.

    FORTUNE GLUTEN FREE NOODLES

    These Fortune Gluten Free noodles are NEW to market and are shelf stable. They can be found in the Asian Dry Grocery Section in grocery stores. Now, there are four Gluten Free Noodles to choose from – Red Rice Ramen in Shoyu Flavor, Ramen Miso Pork Flavor,  Udon Garlic in Chicken Flavor, and Soba Buckwheat in Shoyu Flavor.  You can purchase these Fortune Gluten Free Noodle products at Albertsons, Vons, Safeway, Dierbergs Markets and Cub Foods.

    Ingredients
      

    • 1 Package Fortune Soba Noodles Buckwheat (cooked according to instructions)
    • ½ block Extra Firm Organic Tofu (Cut into triangles or squares)
    • ⅓ cup Handful of Bella Mushrooms
    • ⅓ cup Broccoli Slaw
    • 1-2 stalks of Green Onions (roughly chopped)
    • ¼ small Red Onions (slivered)
    • 3 pieces of Sweet Mini Peppers (sliced into rings)
    • ½ cup Organic Spinach
    • 1 tsp Organic Garlic (from a jar)
    • 1-2 tbsp oil (I used Extra Virgin Olive Oil)

    Spicy Stir Fry Slurry

    • 1 tsp Cornstarch
    • 2 tbsp Organic Coconut Sugar
    • 2 tbsp Organic Coconut Aminos
    • 1 tsp Sriracha
    • ½ packet from the Fortune Gluten Free Soba Noodles Buckwheat (to lower the sodium)

    • 3 tbsp Water or Veggie Broth
    • 1 cup of #SelfLove

    Instructions
     

    • In a wok or skillet, add 1 tbsp of oil over medium high heat. Toss in the mushrooms, broccoli slaw, red and green onions, mini sweet peppers and saute until tender. (about 4 minutes) Set aside in a bowl.
    • Cook the noodles according to the package. Set aside until ready to prep.

    Sweet and Spicy Stir Fry Sauce/Marinade

    • Combine all the ingredients in a small bowl. Add your tofu slices so that they can marinate while you are prepping the above.
    • Save the Stir Fry Sauce for later!!

    The Whole Preparation

    • Preheat oven to 400F. Line a baking sheet with parchment paper or silpat. Place marinated tofu and bake for about 10 minutes, flipping half way through. They should be golden brown.
    • Using the same wok, add the Sweet and Spicy Stir Fry Sauce over medium high heat. You will see the sauce thicken up. It will take about 4-5 minutes. Turn down the heat to low and add your cooked noodles and veggies. Mix all together for about 2 minutes.
    • Add your noodles to deep dish plate. Next, add the baked tofu on top. Add a few green onions and sweet mini pepper rings for garnishes.
    • Serve and devour!

    Notes

    • I used the outer layer of a raw red onion to use as a cradle to hold the tofu slices. 
    • Optional – Organic sesame seeds were sprinkled on top of the tofu.

      Really nice indeed! Love a good noodle dish for a weekday dinner, and this was just that! Sweet and spicy and with deliciously sticky tofu! Yum!
