Turkey Lime Fajitas
When Thanksgiving dinner happens and you pack the leftovers from the party and decorate your fridge with rainbow containers. How in the hell do you think of what to make the next day?!
Yeah, you could make the good ol turkey and cranberry sandwich. Why not try these Turkey Lime Fajitas?
Turkey Lime Fajitas Overview:
The turkey boobies were already preseasoned from a relative so accept the sodium intake. Oh lawdy and they were super dry too. Thank goodness for the life savers of the roma tomato and the freshly squeezed lime juice to moisten the fowl.
NAUGHTY TIP‼️ You could also add a few tablespoons of veggie broth if you feel that your turkey is still dry.
The veggies I had in our fridge were green and red bell peppers, organic garlic and yellow onions. I am not fond of eating bell peppers but I do enjoy the flavors when they are sauteed fajita styled. Of course, I used my favorite seasonings to add more flavor to the veggies.
I decided to use corn tortillas. You could use lettuce and skip out of the carbs or use flour tortillas or if you’re a rice fanatic, make spanish rice!

Turkey Lime Fajitas

Ingredients
- 2 cups Turkey Breast (Left Overs, cut into strips)
- 2 tbsp Extra Virgin Olive Oil
- 1 medium Red Bell Peppers (cut into strips)
- 1 medium Green Bell Peppers (cut into strips)
- 1 small Roma Tomato (diced)
- ½ medium Yellow Onion (slivered)
- 1 small Lime (save the other half for Turkey)
- 2 cloves Organic Garlic (chopped)
- 1 tsp Chile Powder
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Cumin Powder
- 2 oz Shredded Monterey Cheeses
- 6 Corn Tortillas
- Salt + Pepper to taste (optional)
- Dash of #Kisses

Instructions
- In a large saute pan, heat oil over medium high heat. Add garlic & onions, all the bell peppers, and saute about 4 minutes.
- Add turkey, all seasonings, and squeeze half the lime. Saute for another 4-5 mins or until turkey has soaked all juices. Turn stove off and add the shredded cheeses to melt.
- Microwave all the corn tortillas in a microwave safe plate with a wet paper towel on top for a minute or more to warm tortillas.
- Build the fajitas. 2 tortillas per person. Add a slice of lime for decoration. Serve and enjoy!

you can use any veg if you dont favor the bell peppers part. i just had them on hand 🙂
