- UBE EXTRACT – Or you can use vanilla extract.
- WHOLE EGG
- WHITE CHOCOLATE CHIPS – The sweet stuff to bring out the purple color.
HOW TO MAKE UBE COOKIES
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium-sized bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
In a large mixing bowl, cream together the softened butter and coconut palm sugar until light and fluffy.
Add the ube halaya and ube extract to the butter-sugar mixture. Mix until well combined.
Beat in the egg until the mixture is smooth and well incorporated.
Gradually add the dry ingredients to the wet ingredients, mixing just until the flour is fully incorporated. Do not overmix.
Gently fold in the white chocolate chips.
Using a cookie scoop or spoon, drop rounded tablespoons of cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 12-15 minutes, or until the edges of the cookies are golden brown.
Remove the cookies from the oven and allow them to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
SUBSTITUTIONS

Aww, sometimes overmixing can cause the dough to turn cake-like. Also, you can place the dough in the fridge for atleast an hour or overnight and bake it.
