    Today, I’m excited to share with you a mouthwatering creation that perfectly blends the rich flavors of ube with the creamy decadence of cheesecake pudding. Say hello to my Ube Lush Pudding Pie – a yummy, no-bake treat that’s as easy to make as it is delicious to devour.

    I think this dessert is one perfect Summer treat along with my other Pineapple Pudding Pie. It’s been super hot lately in Los Angeles and the need to cool down is a must!

    • Instant Pudding Cheesecake – I used sugar-free cause that’s what I had.
    • Unsweetened Almond Milk – or any milk of your choice.
    • Ube Halaya – The earthy flavor.
    • Ube Extract – For the flavor and color!
    • Reduced-Fat Whipped Cream – Yes, that cool whip kind.
    • Purple sugar sprinkles – optional

    HOW TO MAKE UBE PUDDING PIE

    Prepare the Pudding Mixture:

    • In a large mixing bowl, combine the instant pudding mix, unsweetened almond milk, ube halaya, and ube extract.
    • Use a whisk to blend the ingredients together until smooth and well combined.

    Add Whipped Cream:

    • Gently fold in half of the package of reduced-fat whipped cream into the pudding mixture. Reserve the other half for topping.

    Assemble the Pie:

    • Pour the prepared pudding mixture into the premade graham pie crust, spreading it out evenly with a spatula.

    Top with Whipped Cream:

    • Carefully spread the remaining half of the whipped cream over the top of the pudding mixture in the pie crust. Use a spatula to create decorative swirls if desired.

    Chill Overnight:

    • Cover the pie with plastic wrap or a pie lid and place it in the refrigerator to chill overnight. This allows the flavors to meld together and the pie to set properly.

    SUBSTITUTION

    Instant Pudding:

    • Vanilla Pudding: If you can’t find cheesecake-flavored instant pudding, vanilla pudding makes a great alternative.
    • Regular Pudding: You can use regular instant pudding if you don’t need a sugar-free option.

    Unsweetened Almond Milk:

    • Dairy Milk: Use an equal amount of regular dairy milk for a creamier texture.
    • Other Plant-Based Milks: Substitute with soy milk, coconut milk, or oat milk for a dairy-free alternative.

    Ube Halaya:

    • Sweet Potato Puree: Use sweet potato puree (preferably purple) if you can’t find ube halaya, and add extra sugar or sweetener to taste.

    VARIATIONS

    Here’s a few ideas that you can make to change the pudding pie:

    Ube and Coconut Pie

    • Add shredded coconut to the pudding mixture for an extra tropical flavor.
    • Top with toasted coconut flakes.

    White Chocolate Ube Pie

    • Mix in white chocolate chips or a layer of white chocolate ganache between the crust and pudding mixture.

    HOW TO STORE

    Refrigeration:

    • Cover the Pie:
      • Use plastic wrap, aluminum foil, or a pie lid to cover the pie. Make sure it is tightly sealed to prevent the pie from absorbing any odors from the refrigerator.
    • Store in the Refrigerator:

    Freezing:

    • Wrap for Freezing:
      • Wrap the pie tightly with plastic wrap, ensuring it’s completely covered to avoid freezer burn. Then wrap it again with aluminum foil for extra protection.
    • Label and Date:
      • Label the pie with the date of freezing to keep track of its storage time.
    • Store in the Freezer:
      • Place the wrapped pie in the freezer. It can be stored for up to 1-2 months.

    Thawing:

    • Refrigerator Thawing:
