Today, I was in a rush and my son wanted to go home and eat. He wanted a Patty Melt. Good thing I did a mini grocery haul the day before. I went to Wholefoods 365 and bought my plant based necessities for the week: Beyond Meat Burger patties, my favorite Chipotle Bitchin Sauce, Field Roast Tomato Cayenne Chao Cheese, organic carrots, grape tomatoes, mixed greens, quinoa, jerkies, etc.
I used to be vegan but with my health concerns, I try to have a meatless meal often. If you want to go meatless, check out my Veggin Out section. I love the Vegetarian Lumpia to dip in the garlic vinegar sauce. MMM!
WHY VEGANUARY?
January is all about trying new things, and Veganuary is like a food adventure. This Vegan Patty Melt is perfect for it – no animals harmed, just yumminess.

Imagine a succulent Beyond Meat patty, embraced by the warmth of golden-toasted whole wheat bread, kissed with vegan butter. HOW TO MAKE VEGAN PATTY MELT
Prepare the Patty: Heat the olive oil in a skillet over medium heat. Cook the Beyond Meat patty for about 3-4 minutes on each side or until it’s nicely browned and cooked through.
Caramelize the Onions: In the same skillet, add the sliced sweet onions. Cook them on medium-low heat for about 10-15 minutes, stirring occasionally, until they become soft and caramelized.
Toast the Bread (Optional): Spread a thin layer of vegan butter on one side of each bread slice. Place the bread slices, buttered side down, in a separate skillet or toaster and toast until golden brown.
Assemble the Patty Melt: Place one slice of toasted bread on a clean surface, toasted side down. Layer with the Chao cheese slice, cooked Beyond Meat patty, caramelized onions, tomato slices, and mixed greens. Drizzle the chipotle sauce over the greens. Top with the second slice of toasted bread, toasted side up.
Grill the Sandwich: Place the assembled sandwich to the skillet for a minute or two on each side to get that classic “melt” texture. This step is optional but highly recommended!
